Urbana Butcher Shop announces monthly ordering program

Per its Facebook page, The Urbana Butcher Shop has announced a new monthly meat ordering program: The Monthly Meat Works. This sounds awesome; you don’t need to buy something each month. “The Monthly Meat Works”. It is essentially a CSA for the shop.

This unique program allows you to connect with the highest quality, pasture raised beef, goat, pork, chicken, and rabbits from local farms and ranches. Your monthly package will be filled with handmade sausage, pork rinds, and a selection of cuts and roasts based on your preferences, and no pesky commitment. Order what you want, when you need it.

Here’s how it works:

We will send you an email on the first Monday of the month about that months Meat Works and fun shop updates, then you choose the following:

You select a price level each month:
$100, $150, $200, $300, or $400 – you can always change it next month!

Then, you select your meat preferences:
A: Butcher’s Choice <<– Best Option!
B: Mostly Braising/Roasting Cuts – Osso Bucco, Pork Shoulder, Goat Leg, etc.
C: Larger Format Items – at least 3lb pieces – perfect for larger families
D: Mostly Grilling Cuts – NY Strip, Chicken, Pork Chops, Ribeyes, etc.

Each package will also contain:
-A pound of our handmade sausage
-Ground meat – beef, pork, or goat -quantity depends on price level
-A bag of pork rinds
-1 quart of stock for cooking. It will be frozen to keep your meat cold until you get it home!
-The initial value of this stuff is roughly $25.

All orders will have to be in by the following Sunday. Then, the next day, Monday, we will place our orders with the farms so everything is sent to slaughter. Animals are butchered the following week and we then build your bag to your price ceiling with cuts and roasts. Your orders will be available to pick up the the third Friday of every month.

Feel free to request specific cuts/roasts, more sausage, or ground meat. The cuts cannot be guaranteed; we’ll do our best to get you want you want. Consider bones, stock, offal, or any other part of the animal – help us utilize it all!

Here’s a sample $150 bag – 2 pounds ground beef, a pound of gouda bratwurst sausage, , a bag of pork rinds, a 1.8lb 1/2 chicken, a 2.3lb ribeye, a 2.2lb osso bucco, a 1.4lb beef short rib, & a 1.5lb strip steak.
