Yesterday I had lunch at La Mixteca and ordered the mole enchiladas. They were fantastic. It got me thinking about how I rarely order mole, and need to change that. Mole is a complex sauce made of a lot of spices, and each sauce is unique to its establishment. The chicken mole at Escobar’s was a thing of beauty; it’s too bad it’s long gone.
