Busy Day Tacos

I threw these ridiculously good tacos together with ingredients that were already lounging around our pantry and fridge. Tacos are one of those meals that I feel don’t generally require an actual recipe to be followed to a tee. That said, use what you have on hand, swap ingredients out, add new ones in. We had three of these for dinner by themselves and were stuffed! But I have an inkling they’d go well with some brown rice and a Corona, which is a vegan beer. (Liz)

These were the best tacos I’ve had in a long time. They had some sort of food cart feel to them for me and I loved it. Check out Liz’s recipe below and what to expect from Vegan Ease at the beginning of the new year. (Jeremiah)

 

Busy Day Tacos

1 package tofu, drained
1 tsp garlic powder
1 tsp onion powder
3 T tamari
1 onion, diced
2 T olive oil
Corn or flour tortillas
Daiya cheese (cheddar or pepper jack)
1 can vegetarian refried beans
Baby spinach or shredded lettuce
Salsa
Guacamole (store bought, homemade, or just use avocado slices)

Into a medium bowl, crumble the tofu. Allow it to marinate with garlic powder, onion powder, and tamari while you sauté the onions in oil over medium heat. When onions are translucent, add the tofu mixture and cook ‘til heated through.

While that’s happening, set your oven to broil. Place however many tortillas you need onto baking sheets and sprinkle with cheese. Throw ‘em in the oven and keep close! The cheese will melt fast (I burned my first batch a bit).

Heat the refried beans in the microwave. Now you’re ready to assemble the tacos. Spread a layer of beans onto each tortilla. Add a few spinach leaves. Top that with a spoonful of the tofu mixture. Spoon some salsa on next and finish with a big gob of guacamole! Amazing!

If you’re a vegan, you’re already aware that Champaign-Urbana is, well, pretty terrible overall when it comes to vegan options. So, which veggie burgers in town are actually vegan? You may be surprised (and we will be too if the restaurants actually decide to confirm with us one way or the other).
